Kale and Avocado Dip

I always love snacking on crackers and dips. I mainly opt for hummus but today I felt like something a bit different. I had some kale and avocado at home so I thought I would experiment. The result was very refreshing and tasty!

Ingredients:

  • About 1 cereal bowl full of kale
  • 1 avocado
  • 1 clove of garlic
  • The juice of half a lemon
  • 100g of pecans
  • A glug of extra virgin olive oil
  • Salt and black pepper (I recommend a generous amount of black pepper) to taste

Method:

Put all the ingredients into a food processor and blend until creamy. You may want to add a tiny bit of water to achieve a creamier consistency.

Serve with any crackers, crisps, chips or bread of your choice…
